Your first mistake. It's a software for amateurs so courses will be done by amateurs. Courses in general are the pyramid schemes of 2020s. If you are going to use blender at least learn ui and find a course for a proper professional program and just retrace steps

landscapes are a bitch in blender. Ctrl+B around your camera view (in object mode of course) will improve things by a lot. Also thing LOD. A good exercise for you would be to figure out how to optimize your scene until you can render it properly
