Assuming I get good at rigging, how hard it is? I just watched this https://www.youtube.com/watch?v=ceR
The model itself though, it looks rather simple to me if you remove the particle/xgen fur and the combined maps.

Yes.
Even for a pro, though, you're probably looking at a month of work for the animation if they don't have a mocap setup to cut some corners.

Yeah, the mouth definitively has a lot of detail but the model itself, speaking about the body, is rather simplistic, no single muscle is defined, and the feet look rather noob-ish

the body isn't the hard part, its the face, its all the little movements in the vore aspect, see the throat closing and pushing down, its the face, the mouth, everything... the body you can hide abrupt changes fairly easily especially with camera movement, but to make everything look fluid and nothing standing out like a sore thumb on the first viewing as far as animation goes, thats a motherfucker.
as for automation, look at puppeteers, how they made puppets in movies work, the amount of robotics that go into them. most of that is done via a remote, and with skill, can and is done on computers, though i'm not sure about the input, but I know maya had and interface for a studio that looked like they rigged it to remotes for getting roughs in and then clean up.
but this is also a fetish piece, and if this person did it as a 'labor of love' he may never have been able to disconnected himself from good enough and perfection.
