Honestly, I would make a bunch of the same things but I would try to explore as many ideas/trends/hashtag fads as I could just to build up a more diverse looking portfolio. Now is the best time to explore and get all the weird ideas out of the way to help shape you into the big builds and super detailed work. The work that will start getting you noticed and hired.

I think a detailed car inside and out is good portfolio piece, it's a mix of hard surface and organic complex shapes but at the same time you need to stay true to form and can't fuck it up.

For modeling and texturing cars is fine, I don't know shit about animating but you need to specialize in what you like. Unless you're working in a small studio you're not going to be modeling texturing rigging & animating. You really shouldn't be aiming for minimum requirements, no one else is.
