I'm currently looking to get some tutorials on blender but EVERY SINGLE FUCKING tutorial is shit.

I'm not sure if it's because they update blender so fucking much and change the ui so much that every instruction someone gives in any video loses me because their shit is outdated or whatever and the button they click isn't on my shit because I'm constantly updating my shit becuase I like it up to date.

Any tips?

You're just braindead retard. There's fuckload of good tuts on blender. Including Ian Hubert shirts, or CG matter. But there's more deep and advanced free tutorials out there.
