What I mean, is if blender + FOSS only workflow could technically produce elite CGI results better than propietary noobs (AKA redditors) using industry tools.
Or if the render quality depends mostly on the software being used?

The comparison is unbalanced. The trained carpenter will produce higher quality work, because a decade of experience far outweighs the benefits offered by better tools to someone who is a complete beginner.

There are people out there who unironically use Microsoft Paint or grains of sand to create photorealistic artworks, and directors used miniatures and matte paintings before CGI was invented to tell incredible stories. It's not necessarily the case that a carpenter COULDN'T produce something if he didn't have the necessary tools, he could probably chop down a tree and carve an ornate Baroque wardrobe from it using nothing but a rusty screwdriver if he was given enough time. The difference is how quickly he'll be able to do it, and how much bullshit he'll have to put up with along the way instead of simply pressing a button and having a tool do his work automatically.
