I've been using Blender for 6 months and I didn't know this was a thing. So, to make things quick, I got a scene that exceeds the maximum available VRAM of my GPU so... can I hypothetically render a part in one layer and then the other in another layer and then mix everything in the compositor???

You can, but if the other part of the scene is dependent on the source you still use the info from both layers.
Really the layers are mainly just to isolate elements for compositing, though it's largely been usurped by the Cryptomatte.
Depending on your scene, it might just be a good idea to take creative shortcuts. Like using matte planes for background elements instead of actual geometry, or compositing a shot to not have a ton of elements in the scene.
If you give some info about what it is you're trying to do and what the scene looks like, we could probably give more specific tips. Since you might be trying to brute force a scene on your GPU when there's probably better ways to do it.

Yes, but practically, there are tons of options.
You basically have total pixel control over every kind of image data a renderer gives you if make use of it with an compositor.
Research render-passes, AOV's, matte-objects, shadow-catcher, cryptomatte and camera projection in order to get a grip on that topic.
Not only can you sidestep VRAM issues and render massive scenes, you can make your render much faster while increasing the quality as well.

If you don't render passes to OpenEXR containers, then you're not fit to be a VFX artist.

Blender both outputs and accepts EXR images.

Yeah, Blender's compositor isn't really that great. It's only meant for simple post effects in renders. Things like mist, glare, lens distortion, etc. Or, just to combine your render layers, maybe some simple keying, if that's all you're doing.
For serious compositing, I'd use either Nuke, or Fusion, or even Natron.
Ironically enough, Blender Bob mentions all of this in that 2nd series that I linked. He uses Nuke for most of the tutorial, despite his channel name.
