I do 3d modelling, sculpting, texturing. Use ZBrush, blender, substance and marvelous designer. I also do level design and am a lighting and environmental artist. Could I help anybody only for fun on something small?

You shouldn't do projects unless if they're short small ones like game jams where people will stick with what's given to them.
On most long term projects, many people will treat you like professional artist without the pay instead of a hobbyist. You think that you can tolerate it, but they're so unfocused and demanding that they will burn you out.
In the rare case that you do complete a project with them, they will throw your hours of work out for something else and they won't give credit. Making it a huge waste of time, especially if you're an environmental artist. If you're not going to get credit your hours of work, then you should at least get paid.
It won't be good for a portfolio since amateurs have bad design sense and they overscope, unless if they're constrained in game jams.
