One of the mix shaders was set to add instead of multiply. Made terrain look like bricks. He also had some kind of hidden HDRI that wasn't showing in the background of a render but was used as a light source.

this happens to me, but with cloth physics. no matter what i do, my cloth physics look like shit, clip through shit, and make blender run like shit. but the tutorial looks fluid with no clipping, and runs stable.
