Still, he's an entertaining presenter, and proof that you don't need to anything but an amateur to establish massive following. In fact, it's probably in part BECAUSE he's an amateur that he's so popular. It means that what he produces is more attainable to more people who want to achieve the same thing as the person they're watching.

Is modeling in VR ever going to become a popular work method or will AR take over as the popular way for modeling? (With AR I mean still modeling the old fashioned way on a flat screen while wearing AR goggles so you can always see your mesh in 3D space and maybe do small adjustments with your hands.)

the normal usage of "amatuer" includes paid work. Skill and knowledge has crept into the usage. Also, by your own reply he is being paid AD revenue, he is not being paid directly for the art itself.
example: if high schools started to pay student athletes, they won't be considered "professional".
