most of those blenders tutorials are garbage, it's just "imitate me and you get my result" which doesn't actually teach fundamentals, like why you do it that way. Many of those also only tell you shit like shortcuts once, which is a pain when the video is like an hour long without any pause. Learning process requires repetition and pauses. About that, it requires more than just making 3d models. As you may be aware Hololive faces to track the person's face is not perfect. Our human faces are not the same which is why AI is confused on who you are as a person.
Then we talk to talk about how each one of us talk, some open bigger mouth to talk, other not moving the month but the lips, etc. The smile is by far the complex one, you think it is easy but people do it differently, this leads to so much confusing things for the computer.
So to answer your question, you'll need to build one personally to you. No common tricks or software can make it match to you. This is where Hololive just skips those skips and say it is good enough.

Letting trivial nonsense prevent you from learning is more onions than any of Donutguru's thumbnails. Deliberating over the length or perfection of your learning materials and refusing to start until you've mapped out a perfect path from zero to pro is procrastination with enough extra steps to guarantee you'll never even start.
If you want to learn the basics of Blender from a teacher who takes time at each step to explain common pitfalls and how to fix them, Donut 3.0 is a good place to start. You'll get a donut out of it for your asset browser, and you'll be much more comfortable with Blender's interface and basic operations, and most importantly you'll have the experience of taking a project from start to finish.
Once you're done with that, use what you learned to make a custom model of something you're interested in, but without a walkthrough this time. Use reference. Finish even if you don't like how it looks. It is more important in your learning process to finish your projects than to make them perfect.

I've started with the donut with the intent to make 3D smut like Nyl2 and guys like that, and it feels like it's a quantum leap from this static shape stuff to animation. Am I better off trying to learn animation in SFM first then go back to Blender afterwards, or should I stick with Blender?

Do not use Valve's Source Maker it is heavy outdated, 3d models get stretch, worst way to learn about animation.
Understand to first make a moving model is to make the bones, you'll then need to make sure the bones do not do crazy things like Valve's Source models do.
Once you got all the first steps to make a model move into a program, you'll need to find a program. The easiest to understand is one used by JP called MikuMikuDance.
If you want a more professional setting try: https://webglstudio.org/ but this is way harder and it is recommended to at least understand how to move a model before even doing anything.

animation is animation. different software can be more or less comfortable for you, but the principles are the same. that being said, Maya is the leader in character animation, so you should at least give it a try.
