why do I always see people posting about character models and never about stuff that could get you a job much more easily

Doesn't really matter. I've done visualization for an architecture company. Modeling is a really small part of a project because you get a Revit or ArchiCad model to start from, and there are a ton of ready-made assets for decorations. Most of the work is the lighting, texturing and shading, fixing the occasional model issue, and deciding the look of the whole thing.
It's also a very interactive process with the higher ups in the company & the client. You can't really farm that out to some pajeet who doesn't speak English and who doesn't understand the culture, context, and the project at hand.

Modeling stuff like that really is soul sucking and becomes terribly boring after a while. Similar applies to a majority of everyday props for games and movies as well, but the difference is that at least texturing those assets can often be interesting and that's the fun and creative part. But you don't get even that if you model stuff for soulless archviz renders where everything has to be clean.
Also, I'd say it's a lot easier to have a monkey model something that is good enough, but texturing it is a step above it, not as many people can get that right.
