The statement is brutally ambiguous, I honestly think the guy didn't even know what he meant because there is a lot of visual styles that fit the category.
There is a """clue""" in the post because he said that indies only do "pixel art, 2D, and low poly" (which is not the case at all, a lot of indies do actual PBR oriented graphics, make stylized models or just use asset packs, I could say that those indies make a 50% or 60% of the market and are, quite often, overlooked, a massive generalization coming from a "130+IQ" guy)
but still, there are AAA teams that use those art styles, that invalidates the statement automatically, I would go further to say that AAA quality is as ambiguous as saying that there is a "middle ground" because we have seen some really shit games made by AAA devs.
I say the guy is just delusional and you are worrying too much about this imaginary "middle ground"
If you are concerned about the art quality of your games, I would say that the best is to try and experiment with an uncommon artstyle as art direction is what saves a game from looking "old" or "cliché"
Half-life, Outlast, Sonic, Mario, even FNaF have defined styles that people look back to and make games or any art inspired on them.

No shame on using asset packs anon, if you have an idea for a project don't let the assets hold you back, if the game is fun then it's all you need, the most important part of a project or a demo is presenting both the main mechanics and stablish an objective, everything else is secondary.
Just look at the early stages of Bastion and you'll see what I mean.

This tells you a lot about the objectives you should have in the development phase of a game, either developing on your own or to present it to a publisher.
Also, no shame in making low poly or any style you want to/can achieve, you can use them as placeholders and replace them later.
Something I struggle is planning a really big project, but if you are a one man army you should stick to more simple ideas, games where you can make a simple mechanic and stablish a clear objective.
Look at Getting over it, Papers please or Tetris, single dev games and still quite popular, or look at jump king, very popular right now, easy mechanic, really hard to master.
Try to experiment doing something like this and it might help

Nope. It's the overall execution that matters, not one part. You can have the best art in the world, but it'll mean nothing if you have nothing to show off in the end to others in the end. It's nice to have great art direction, but keep in mind that the goal of your game is to make a good game, not an art museum. If your game is boring, people will always overlook the art.
Devs end up with "lazy low poly" because it's tremendously hard to finish games. A lot of older games were made by multiple well paid members as opposed to one solo dev. Most consumers don't care if games use assets or "lazy art styles" just as long as it's entertaining.

It's easy to mistake it for wisdom, but it isn't smart since they are people who gave up on solving problems long ago. A lot of pros have a positive and humble outlook. I think that's an unfair generalisation. Some cynics may also be assholes who only engage with people looking for advice only to pleasure themselves (like the frogposter), but some of my nicest and bestest teachers were cynics. Just look at one of the French poster's three threads, for instance. If he never took the advice of cynics (imblying imbliqashindsns that he'd take advice...), all he would be left with would be the posts about how hopelessly gay the French are, and not the posts encouraging him to keep up the struggle to one day reach his goal of a corridor of rectangles.
