that's cause you are doing it wrong. Buy used data center CPUs. I got two xeons for 750 total. A supermicro MB for 200, 128gb of LRDIMMs for 400. That's 44 cores at 3ghz and 128 ram. My graphics card is sponsored through work, so I wouldn't know if the market relaxed for that. As for software, just pirate that shit if u need it.
No nvidia GPU, no upgrade capacities and MacOS is a terrible workstation.

Depends on the 3D. It's a big topic with all different types of needs.
I use blender for anime-style animations on a macbook pro with M1 pro and have no issues.

I use a M1 Mac Mini with 16GB RAM. I haven't had any issues yet. I haven't stress tested it either
