Would it be practical to 3d scan physical sculptures to make models for animation? Does anyone have experience doing this? Ideally I'd like to minimize the time I spend staring at a screen, it's also much less frustrating.

No because you'll need a $10k+ scanner and you'll still have to retopo the results.
If you want to do stop motion then just do stop motion.

I sculpt and 3D scan profesionally.
Don’t bother with even the idea, you will spend more time cleaning up models than modelling from scratch.
I have access to a $15k scanner, I tried it, it’s a waste of time.
