I don't know what these are generally called, I've heard the term "helix loops". They leverage the fact meshes are triangulated before rendering and thus get better deformation "for free". Depending on the renderer the triangulation might not be what the artist intended so the result looks worse, I guess that's why they're not more widely used.

I think this is just a remesh program like the one in zBrush or quad remesh in blender.
And these remeshers have no symmetry if you take a look at the forehead for example.
Basically he was too lazy to retopologize manually with a shrinkwrap and hes charging 100 dollars.

This is how the world works while everyone else cries about it not being professional grade. It's possible they unsubdivided their model for the 3D preview so that anyone who ripped it would have extra leg work to do.
