Well first off, no 3d artist uses other's model to quickly change the current model. Second off, what the guy is doing isn't great when animating it, there are reasons why models need to be weight assign. The video did everything ok with bones but weight was badly explain since reducing polygons isn't always the answer. Also since you using another model with clothing i assume, the clothing also needs their own animation, changing it to fit cloth physics or simulation just ends up making things look bad.

Because apart from very repetitive models making everything procedurally is a waste of time, especially if the model is used once. That's why it's better to just augment traditional modelling with parts of it like it happens in 3dsmax or MODO.
