Just download the models and look. It's flat faces with painted expressions. You would have to have multiple uv sets or find a way to tween between the expressions.

seems like i end up adding too many vertices and then individually trying to move too many of the vertices around which results in faces that do not flow naturally. i think the term i might be looking for is "topology" but i know almost nothing about this subject. randomly grabbing vertices and trying to eyeball the model from various angles does not seems like the correct solution, but maybe it is, i wouldn't know.

Getting the UV's to look correct is absolutely difficult, don't fucking lie unless you've tried to do this yourself. It's a massive pain in the ass and even when you figure out how to do it consistently it is endlessly tedious and there are little to no third party tools to make it easier

If you don't care about pixel perfect UV's it's easier but then your work will look like shit to the crowd of people who actually appreciate the artstyle. If you have an easier way of doing the UV's for this I would love to fucking hear it shithead.
