Good subd topology is interesting because it feels technical but you'll find its actually an art and not a science, feel gained through experience is king here and the good news is dummies can get that. Seriously you will meet some massive idiots in your life who can beast out a great subd model so just keep at it, anon

If you fix an n-gon you will end up with another n-gon or a pole unless you redirect the edge flow 90 degrees and make a loop or continue the loop that got stopped by the n-gon
Also n-gons are usually better than poles because they can be turned into quads or tris by the renderer easily, the only thing making them quads does for you is you control where the edge goes.

In general you will have to chose between a n-gon or a pole somewhere. Generally the choice comes down to if you can shift the pole to a UV seam or not.
