I mean they're just control bones so their shapes can really be anything someone want it to be and these ones are pretty basic shapes. The only thing I can't tell you are their purpose like this arrow on the top of the neck. If I had to guess, it's to replicate the back&forth movement chicken makes with their neck when they run.
