My goal is to do hand painted models, so I've been wondering. Is sculpt/retopo worth it if I don't intend on baking any maps or should I stick to poly modelling?

Will you eventually be animating or are you just trying to purely get output results on a static image?

It is worth it because you can multiply or overlay AO and curvature maps to your base color/diffuse/abledo. AO can be used as a starting point
