Honestly you remind me of blender discord fags who always talk about making waifus but I have not seen anyone actually make a decent looking model in showcase. Because anime face geometry in most models optimized for cell shading (games) or non-directed ambient light (figures). For real shading you need to round surfaces and eliminate sharp angles. It destroys the rest of anatomy so I suppose not every artist can ever think about so strange things. I tried to make face that looks cool in blender viewport. I made it. It has nothing common with human's face, it's alien cyborg. You won't face this in game.
And yes, it's OK to do different model styles for cartoonish and real shading settings. It's not OK to think that model created for one settings should be fine in another.
