If you want to learn anatomy through 3d softwares such as zbrush, then I really recommend Anatomy for Sculptors by CGMA. Christian Bull is the instructor. You can easily pirate it from cgpeers or cgpersia.
For head anatomy, search for victory3d head anatomy, instructor is Corazont Bryant, where she teaches how to make Albert Einstein.
