Nah, I don't really see the point other than for practice.
Guns are one of those things (like cars) where there's a fuckton of models freely available for almost any variant you can think of. No point in doing work that you don't have to. Guns are cool and neat don't get me wrong, but the time spent modelling and texturing a gun can be spent elsewhere on the rest of your scene.
If you're not doing a scene, and you're just modelling though, obviously the above doesn't apply. Though if you're a texture artist, you could skip the modelling process as well.
If there's a shortcut that I can take, I'll take it. It means I can do more work and add more complexity to a scene than I otherwise would have if I modeled absolutely everything. It also makes things a bit cheaper for clients, which means I don't scare them off with proper estimates, and makes projects a bit quicker to turnaround to keep income steady.
Most hero assets though I'll model and texture from scratch.
