have a bit of experience in blender, and want to learn just enough CAD to make my future employer think I know how to use it well, what would be the best and most impressive simple project to make, and can I learn how to do it in like 2 weeks? Give it to me straight.

Pretty easily. It's significantly more intuitive compared to polygonal modeling, and one can get productive pretty quickly.
