How would you bros go about modeling pic rel? In this case floating geometry would be a bad choice wouldn’t it? I was thinking about cutting the faces, then deleting faces and shaping it. But it seems much faster to do it separately. What would your approach be?

Unless you have specific requirements you can just let it overlap.
Totally not an issue for game or cg animation assets.

Definitely just let the geo overlap, you can get that bevel with normal mapping if you want it

left is intersecting, right isn't
right uses ~150% as many faces as left.
At 3 subdivisions (as in pic related), it's about 100k vs 150k faces
