You could! While it's not often preferred by artists since they lack any programming skills, it can still be a viable option for many kinds of animations.
Some forms of lighting can be especially difficult to replicate though, such as proper caustics

You can use ue for rendering and composition but not really for animation.
I mean technically there's animation blueprints but those are more meant for adapting existing animations to the game context than creating new ones.
