Because out of all the theories regarding how the Moon formed, this makes the most sense. For a long time the theory was that the Earth and Moon formed together, but there were too many oddities about the Moon and so they turned to other theories.

Well they know what lava flows look like, they know what inflation under the crust looks like, and they can go to the moon and check for themselves in the little holes to see if layering resembles what volcanologists have seen and photographed on earth and then make educated guesses and inferences and so on.
