The assumption about humanity that many have is that we will continue to progress, perhaps not linearly, in our technology and scientific understanding.
Is it possible that humanity could regress? Like if there was a bronze age style collapse or if humanity chimped out with nukes? Could we reach a point where too few people know about shit like advanced chemistry, Einsteinian physics, advanced metallurgy, computer science and hardware and thus lead to a general age of barbarism and primitiveness?

I can very easily see this as possible, centered about those silicon chips in Taiwan. I could see China invading, US torches the manufacturers for mil threat reasons, China never is able to meet global demand for high end chips, technology ceases progression. US chip makers are almost unprofitable as it is, one downturn generation and its getting shut down.
Now there are no high end chips and no one able to meet the demand for the foreseeable future.

Because China/Russia, sanctions but permanent ones, so the US would be hit with a massive price increase for everything like "Putin's Price Hikes".

No, the knowledge cannot be lost even in the case of 99+% extinction.
However, humans could lose the intellectual faculties to use this knowledge and lose the population size and industrial capacity to manufacture and distribute the technologies.
This is way fucking worse and way more fucking boring than all the other apocalyptic scenarios and is also the situation we're actually getting closer to rather than further away from.
