Please explain to a brainlet like me what is the nutritional factor behind insulin resistance. The more I read the more confused I am. There seems to be scientific papers providing evidence for all the usual hypothesis that are said to cause the ectopic fat accumulation in skeletal muscle and liver cells. That is:
a) Constant insulin spikes primarily from simple carbs.
b) High fat diets (being saturated fat the main driver)
c) Overnutrition. Insulin resistance can only occur due to fat accumulation after eating more calories than you need.
If b) is right then why does keto diets work to improve diabetes? Are them just short term solutions?
If c) is right, then why there is low body fat people that develop insulin resistance? Also, would this hypothesis mean that there's no risk in binge eating 1500 kcal of sugar if that day you burn 2000 kcal? What about gaining weight building muscle? You are supposed to build muscle by caloric superavit plus exercise plus enough protein so whoever that wants to build muscle must put themselves at risk of becoming pre-diabetic?
The most logical theory to me seems to be a), but I've also seen papers where feeding people a high carb diet didn't cause insulin resistance.
