anything high-brow, artful, and inaccessible to the vast majority will be specializing in a certain subfield, so here are some favorites to specialize in low-dimensional topology (in order):
algebraic topology by hatcher
knots and links by rolfsen
4-manifolds and kirby calculus by gompf and stipcisz
