Why do we have male and female when logically hermaphrodite creature with both gametes would be more efficient?

More efficient at what? With relatively few exceptions, every multicellular organism has a male/female or large gamete/small gamete split. From plants to insects to shellfish to lizards to apes.
Its not at all obvious why a hermaphrodite species would be more "efficient", whatever you think you mean by that. That the world is full of sexual species, even across life as disparate as cannabis plants to blue whales, should be a pretty major clue that it's serving a worthwhile function.
