Why do cold thrust systems in rocketry use compressed gas rather than liquids? Im a bit of a brainlet so go easy.

I have been looking at a few videos and most of the cold thrust systems look like they have high pressure 1 liter C02 tanks. These tanks im assuming are filled to about 10,000 PSI. I think the plumbing and cost of all these systems is simple and cheap. What I was wondering though is how liquids would fare? Im looking at liquid nitrogen right now and it has an expansion ratio of 1:694 at 20 Celcius. So 1 liter of liquid nitrogen that has been vaporized at that temperature would be 694 liters of gas. If you just took nitrogen and compressed it to 10k PSI would there be more liters of gas than the liquid state?
