embryo selection (and modification) is certainly much easier than full gene editing but it's also a lot less useful. You also have a decades-long headstart for the technology for genemodding adults (who can pay for themselves).

Giving your kid glowing purple cat eyes as an embryo is pretty absurd, but that kid paying for it herself decades later is a lot more reasonable, even if it is more technically challenging than doing it from the first cell.

Yes, but it won't be for quite a while.
Organ scaffolding will most likely be the practical choice before that happens. Essentially, you make a 3d model of an organ, print out a 'scaffolding' of it from some kind of organic or synthetic tissue, you then take cell samples from the person who'll receive the organ in question, and then cultivate them in the scaffolding until they've replaced all the original tissue with those new cells. The end product being a 3d printed copy of an organ that won't be rejected.

With scaffolding you'll be able to make a mold of your own genitals, but bigger, and then transplant it onto your body.
The big con is you'd have to cut your old genitals off to put your new genitals on. The big pro is that it can hypothetically be as big as you want... or any shape. In the event you want a literal horsecock.

At the moment I've seen hearts, lungs, kidneys, livers, skin, and ears be made using such a process. They've also made ovaries for mice in the lab, so it's getting there.
