No one knows for definite, it is an area of active research. The best guess boils down to less calories means a slower metabolism which means slower ageing.

It's simple. Eating more means your body has to work harder to digest and utilize it for energy, which ages you faster.

My mom is 56 and looks ten years younger and acts it and it's probably because she's been eating a calorie restricted vegetarian diet for 30 years. She doesn't take any meds and has no health issues.

I don't know how the fuck she does it, but it clearly works.

Because the food itself is mutagenic as a consequence of heavy processing with various substances? Substances that the body has to adapt to but consequentially often contains components that can act maliciously? Just a thought. Oh and nevermind variables such as pollution, cosmetics, cleaners, exhaust, electromagnetic fields, rogue radioactive isotopes, and so forth and so on. There is so much of everything everywhere that physiologically linking factors becomes difficult because other substances may be inadvertently attenuating the body to specific conditions in comorbid manners, thus skewing the data. How reliable are samples? How reliable are the tests? The individuals behind them? Money money money money.

Because calorie restriction signals to the body that you are in a food scarce environment, and so the body activates certain longevity genes and processes in order to conserve your body for when there is more food.
Your body is just lowering its flame because the low calories makes your body think that you need to wait till you find more food.
