Talking basically out of my ass but, could be ampk. Cutting out alot of carbs in favor of protein and fats likely would increase ampk causing all the autophagy breakdown of useless shit and the increase in mitochondrial function. I

the brain can run on 70% ketone bodies, one reason ketosis is effective for many alzheimers patients is because they are unable to properly utilise glucose any more due to insulin resistance which ketone bodies completely bypass and allow braincells to directly access energy again.
The effects on the elerly is quite miraculous

Avoiding dairy and wheat seems to help too, and those are often excluded if going low carb.
