First, you need to remove the brain skin, wash it and water it, since the brain has a metallic taste to it and much blood. Before frying, you should dry it with a paper towel.
Cut onions and press garlic and put into a pan with butter. Fry it until it's a little bit caramelized. Then put the brain in. It will break apart and when it's done put in the egg white. Then put salt and finally cut parsley into the mix, and put it on the plate. Make a little crater, and put in the raw yolk. Put onto it some pepper and salt and finely cut parsley to your taste and mix it up.

You only get prion disease from eating human brains, or from eating meat that came from cows that eat cow brains. You can't get any disease from eating another animal's brain.
