Why are the "Big Five" traits considered a valid and scientifically sound system of classifying different personality types, while the Myers-Briggs types are considered more akin to astrology or fortune-telling?

Because some leading psychological association agreed on the "Big Five". We know that this one association is more or less in control of the entire funding going to research so researchers will have a hard time doing research with alternative models.
Of course, it's an arbitrary classification of behavioral traits and impulses based on research that already assumes the model to be scientific but that's how "Science (c)" works. Obviously, market strategists and corporations will work with much more elaborated models that aren't accessible to the public. Hence, the "Big Five" model is likely just junk science meant to entertain and condition the masses. The kind of information you hand out to your underlings in lower management so that the drones keep on working.
