Why was entropy extremely low to begin with? There must be some sort of mechanism that just spits out densely packed energy from time to time.

You have zero reason to assume or believe that there aren't infinite universes that we can't see because they're just too far away.

The visible light spectrum only gives us a view of one tiny bubble in an infinite void containing bubbles of every possible size and composition.
