I have been trying to cut back on fats and having more veggie foods so I have tried different types of meals recently, and I noticed a big difference in how the poop smells.
Why does the smell of poop when you eat a meat-based meal, like pic, smell stronger, more pungent, like putrid meat, it smells horribly, and a mostly leafy-greens meal has a more mild, earthy smell, almost like freshly-cut grass or vegetables?
I thought it was all about heart health and weight loss, but now it has me worried about what is going on in my gut when I eat meat.

ok, but then the difference is even stronger. Like, if you only have a steak with no sides at all, just the meat, and then try a leafs-only salad, with orange juice and some spices for dressing, so no carbs either, just leaves, the diference in smells is even more obvious.
Meat poop smells like an animal crept into my ass and rotted in there.

1.4 billions people is too large of a group, with far too many variables involved to reach such broad conclusions.
Do you have more specific studies demonstrating such effects and how they correlate to what they eat, in controlled experimental setups? Otherwise...

Sulfur is one of the CHNOPS that are required to life. More specifically, proteins need sulfur, so meaty foods and dairy are full of sulfates. Certain veggies will have lots of sulfates too, so they too will make your shit smell, though prob not as much as meat.

As other people said, gut health is important too. Sometimes byproducts like ammonia or hydrogen sulfide become abundant because the bacteria that make them are abundant.
