When you begin making physics and/or mathematics a significant part of your life, and you are skilled enough to be able to figure things out (whether that means coming up with respectable physics theories, or solving tricky math puzzles and pondering on unsolved mathematical problems) on your own rather than just reading walkthroughs in textbooks.

this. the one exception is if you're so cracked that physicists and mathematicians commonly refer to you as one anyway. but it's hard to get to that level these days without going through grad school already.
