It was done in 2008 using RNAi gene silencing:
> Through RNAi, genes can be specifically shut down or turned off. By shutting down the lachrymatory factor synthase [LFS] gene, we have stopped valuable sulphur compounds being converted to the tearing agent, and instead made them available for redirection into compounds, some of which are known for their flavour and health properties.
Source: https://www.sciencedaily.com/releases/2008/02/080202115345.htm
The crystal structure of LFS can be seen in the attached image complexed with crotyl alcohol, which has the exact same structure as the pro-lachrymator but is missing the sulfur heteroatom. The study in question (DOI: https://doi.org/10.1021/acschembio.7b00336) which yielded the crystal structure was mainly focused on mechanism, and working with lachrymators is a hassle due to their nominal properties. No clue if anything further has been done in terms of commercial upscaling.

>onions that wouldn't cause you to cry
why do you faggots do this?
the reason people like onions is because of the chemical that make you want to cry. just put it into the freezer 15 minutes before you cut it.

They're taking the spice out of life. My uncle used to spit watermelon seeds as a tradition, like it would be a competition to see who could spit them the farthest but and now they're all seedless. I don't see the point, it just takes away the character from the food.
