Can't we just use excess generated energy to raise up a huge boulder using some ropes and then lower it slowly when we need the potential energy?

People tried that in the past but they raised the boulder too high. That's how the moon was created.

Energy density too low.
Pumped hydro storage is the only realistic and cost-effective method.
