Is it possible to become a chemistry maxxer when you don't have access to a lab? I want to know at least in theory what everything looks like on a chemical level. What's a good textbook progression for that goal?

OP, how does it make you feel that you're less resourceful than a meth dealer with a lab in his garage?
If you're prepared to pay a small subscription fee, I think there are online lab simulators that could be better than nothing. Some of the electronics ones are nice too.

Lab is just forbidden kitchen. You have a counter, sink, oven and stove, brightly lit, all the tupperware and raw material+cleaning supply to mix.
