it is accurate in the sense that what we eat directly affects our health, and great variety of raw vegetables is essential in a healthy diet. However, I don't know the exact accuracy of each claim in that image though.

No.
Here's what the 'evidence' for these recommendations amounts to:

- Toxins that cause a response in the human body, this is somehow interpreted as positive and even further vaguely connected to some health outcome (like the prevention of a specific disease).
- Some particular nutrient an organ needs. While ignoring that: it needs a lot more than just that nutrient, that food is not a good source of it compared to other foods (i.e. animal products) due to the amount and form it is in, bioavailability, digestibility, relation to other things in the food, etc. It is also dubious why you would attempt to eat to get some specific nutrient or worse takes supplements over a complete diet to begin with. Thankfully, these foods and supplements too are poor sources anyway.

All of this shit is bad for you but some if it straight up terrible, like the worst food you could be eating. Such as beans, mushrooms, and olives because they offer practically no nutritional value in practice. Ginger is going to give you stomach cancer and sweet potato is going to give you kidney stones.
