We don't actually have a lot of complete Spinosaurus skeletons; they're constantly missing pieces because it's a semi-aquatic animal and they fuck off down the river, etc.. Additionally, Spinosauridae were mostly indigineous to Africa, so time between finding bones is a little spacious due to Muslim/African shenanigans.
Combine those two things, with the inherit over-inflated ego of the average paleontologist, and you have a community practically climbing over each other in a mad fervor to constantly correct one another with yet another "latest and greatest most accurate Spino model".

In the absence of actual bones we also filled in the gaps be inferring its' appearance based on it's closest relatives: other Spinsauridae species like the Baryonyx n' so forth. This "sounds like a good idea", but then: these animals lived in different parts of the world and were possibly separated by 30 million years of evolution, so it didn't pan out like expected.

And it's also not clear what type of feeding and lifestyle the animal had because it shares different characteristics with different extant animals that do not share the same lifestyles and feeding.
