If you stand in an open field with nothing around you for miles, perfect scenario like a minecraft flat world, can you literally feel the moment a front passes over you or is it too subtle to pick up on?

yes, you will notice a 20degree temp change and if you have exposed nerves or nerve damage you will feel it from that too

I was out in the fields when different winds were converging once, I definitely felt when the wind shifted and the air got much cooler all of a sudden, soon after rain followed

You don't even need a perfect scenario with a flat world. If you've ever been outside on a hot day and had a storm roll in, you will likely have noticed the temperature decreasing.
