I'm playing final fantasy VIII at the moment on my Google Pixel 6. I want to know what the true meaning of Junction is. I know we have junctions in roads, but what scientific implications does the concept of a junction have? I sense they are vital to conscious experience.

Magic exists in the fantasy world of FFVIII.
It does not have requirements to follow logical or scientific thought in reality.
The Junction system was just a convenient replacement for the Materia system of FFVII.
Source: Have over 200 hours played on both games, am an expert level player at both, and have contributed to the NG+ World Record speedrun at one point. I watched 4-8bit's death perform it live, after I had suggested the Coin throw tactic to take advantage of the Materia save transfer glitch.
However, the overall concept of Junctioning, as described in Universe of FFVII is to combine explicit fundamental elements or concepts from their world into weaponry or equipment imbuing those things or the user with aspects of the Junctioned concepts.
Fire, burn, ice, cold, gravity, fractionalizing health, lots of weird stuff becomes possible in that system.
It is similar to lines of thought with technological development, combining new technologies with old concepts to improve one or both.

FF8 punishes leveling up because each time you level up all the monsters and bosses get stronger than you do. Therefore you need to increase your stats through junction and drawing. That's the true meaning.

:an act of joining
You put meltdown to vitality because it's the spell that makes the enemy vitaliy drop to 0
You put haste to speed because it is the spell that increases speed
Shell to Elem-D because it is a elemental defence spell
etc. You join the spells where they belong
FF8 junctioning is actually a good math mini-game
