Recent project made me realise I need to learn some of this shit from first principles. Anyone got book recommendations for audio processing stuff (encoders/decoders and the like) (basically stuff that talks about things like what goes into an audio signal, what are the various formats, what are the encoders doing at a fundamental level). Need something from mid tier to semi-high tier complexity. Online courses/similar sources work too but I have a habit of procrastinating the fuck out of those so eh

For DSP basics, Oppenheim/Schafer is pretty much the standard go-to text book. I haven't read it but apparently it's quite dry and at times hard to read. I've also heard good things about "Understanding Digital Signal Processing" by Lyons. It's a more approachable introduction to DSP. I've read some of the chapters and it doesn't disappoint but it's really just the basics.
For musical audio processing I can very much recommend the DASP and DAFX books by Zölzer as well as the synth and FX books by Pirkle.
Regarding audio coding I really have no idea but I'd assume that reading the specs of whatever audio coding formats you're working with should do the job.
