So what’s the difference from using this method to make steam vs using a wood fire or coal? Like does higher heat temperature increase the steam velocity or pressure. Is there a method of calculating this energy transfer? And why just steam turbines? These techniques over over a millennia old even the combustion engine is like a 120 years old I thought we were innovating?

you're coming at it from the wrong angle - the better angle is "how in the fuck is it possible that a steam turbine can be >75% efficient at turning heat into power?"
there is unironically nothing better - we're talking approaching the theoretical limits of a Carnot engine with a glorified kettle spinning a fan. steam turbines are just too fucking good.
