just some fun where I need to practically go through a couple steps, use lab equipment maybe and procure something nice

I know some people make crystals (for viewing) at home
or a homemade fertilizer for plants
anything like that?

essential oils are pretty cool. look up steam distillation and soxhlet extraction
you could also make dyes if you're interested in real chemistry. I hear fluorescein is pretty easy to make, and many other exotic dyes share similar procedures.

You could also look into environmental testing, e.g. does your house have lead dust? is there arsenic in your soil? if so, how much? titrations can be quite pretty.
obviously you can just buy test kits, but if you make your own test strips it can be fairly involved

If you want to get into crystal growing, you should maybe take a look at https://www.youtube.com/@julasxziom6386 and https://en.crystalls.info for inspiration. You can archive a lot with very little equipment if you have patience.

Steam distillation kits are quite affordable in the usual places. Watch some videos on it as well to not make dumb mistakes in the setup though.

Things themselves don't have to have material use. The process of making them, having fun and learning is in itself of value.
On the topic of dyes, you can make invisible ink from commercial dyes that glows under UV for example, and it can also be mostly done with grocery store chemicals. The concept is that some forms of stain removers contain dithionite, which reductively cleaves azo dyes (e.g. red 40) into their respective amines, which in some cases show fluorescence. Just look for procedures, it's fairly simple.
